Global Spectrum, the management company for the Comcast Arena at Everett, welcomes new Executive Chef for Centerplate, Duff Allen. Chef Duff will be responsible for overseeing all culinary aspects of Centerplate’s food and beverage operations within the Comcast Arena and Edward D. Hansen Conference Center.

Duff’s background includes extensive experience serving thousands of guests, including his tenure as Executive Chef for the Meydenbauer Center in Bellevue, and most recently, as Chef and Director of Food and Beverage at Washington National Golf Course.  In his new role, he will oversee the day-to-day kitchen operations, including menu development, staff growth and training, and purchasing locally-sourced ingredients.

“Our fans, clients and guests will be sure to eat, drink and be merry with Chef Duff’s influence on our food and beverage operations,” says Global Spectrum’s Kim Bedier, General Manager for Comcast Arena at Everett. “We are looking forward to his new food concepts at concessions in the Arena and his creative Conference Center menu choices.”

A northwest native, Duff’s culinary education began at South Seattle Community College’s school of Culinary Arts, he then spent time honing his skills at local fine dining restaurants and in high production seafood and steak operations.  He has several decades of northwest Chef experience, serving thousands of meals and managing large catering events both at the Meydenbauer Center and with Classic Catering Northwest.  Duff studied at the Culinary Institute of America-Greystone in Napa Valley, where he mastered the art of food and wine pairing, a skill essential to the fine dining industry.  Duff’s Seared Tuna Appetizer earned the prestigious Silver award at the Convention Industry Council APEX Food & Beverage Challenge. He currently co-owns Northwest Spice Company, a wholesale dry herb and spice company based in Seattle.

“Chef Duff not only brings award-winning flavor to the Centerplate team, but also extensive experience in custom menu development,” stated Randall Olson, Centerplate’s General Manager.  “His expertise in developing creative dishes with northwest flare fits perfectly within Centerplate’s stated mission to use locally-sourced ingredients in creating ‘Craveable Experiences. Raveable Results.’”
